1-1/2 cups all-purpose flour and 3/4 cup cake flour (+ 4 Tb. flour)
OR: 2-1/4 cup flour total (+ 4 Tb. flour)
1-1/2 teaspoons baking powder (-1/8 to 1/4 tsp.)
1-1/2 teaspoons baking soda (-1/8 to 1/4 tsp.)
3/4 teaspoon salt
2 teaspoons cinnamon
3/4 cup granulated sugar
3/4 cup light brown sugar
4 large eggs + 1 egg
1 tablespoon vanilla extract
2-1/2 cups shredded granny smith apples (approximately 3)
Brown butter and discard solid residue. Allow to cool. Sift together the flours, salt, cinnamon, soda and baking powder into a large mixing bowl and set aside.
In a separate bowl, combine both sugars and eggs with the vanilla. Whisk smooth. Add the reserved browned butter to the sugar - egg mixture. Add the flour mixture all at once and mix until it is all combined well. Add the apples and mix well.
Pour batter into two prepared 8" cake pans and bake immediately in preheated 375° F oven. Cake layers will take approximately 35 to 40 minutes.
