1/3 cup orange juice
1 egg, beaten
1 Tb. lemon juice
1 tsp. grated lemon peel (optional)
1 cup whipping cream, whipped (or Cool Whip)
Combine everything except for the whipped cream and cook for ten minutes. Stir constantly while mixture comes to a boil. Continue stirring off and on until thickened (about 10 minutes).
Refrigerate cooked mixture until cool. Once cool, fold in whipped cream and blend well.
This can be poured over a fresh fruit mix; or, it can be served with chilled, canned fruit. YUM!
