1/2 cup chopped walnuts (I grind these up as soon as I get home from the store so I won't snack on them at night!)
3/4 cup dried fruit (I've tried a bunch of different stuff here, but I like plain raisins the best)
1 tsp cinnamon
1 tsp kosher salt
1 1/4 cups skim milk
1 egg
1 tsp vanilla
Preheat oven to 350*
Mix dry ingredients
Mix wet ingredients
Pour wet into dry
Stir
Pour into a 9x9 baking dish lined with parchment
Bake for 40 minutes
Cut into 9 squares

The dry ingredients.

The wet ingredients.

Presto!
I stumbled across this recipe while searching for clever ways to get more oatmeal into my diet, and I've been making it ever since. I got it from the blog of a Registered Dietition named Kath; check out her site for more tasty (and healthy) recipes! Much appreciated, Kath!
Did you take those photos and upload them to your post and even add text underneath them?? Well I'll be damned. I'm impressed! What are ya? A geek or something?
ReplyDeleteThat is awesome, JR! I can't wait to try them!
