Tex-Mex Dressings


Cilantro dressing (for fish tacos)
1/2 cup mayo
1/2 avocado
1/2 cup cilantro
3 Tbsp lime juice (one fresh lime)
1/8 tsp cayenne pepper

Mix thoroughly in a blender


Cilantro Ranch Dressing
1 packet Hidden Valley Ranch mix (milk version)
1 cup mayonnaise
1 cup buttermilk
2 diced tomatillos
1/2 bunch of fresh cilantro
1 clove garlic or garlic powder
3 Tbsp. lime juice (one lime)
1 jalepeno

Mix all ingredients together in the blender.


Cilantro Lime Vinaigrette
2 tomatillos
1/2 bunch cilantro
2 cloves garlic
1 Tbsp. diced jalapeno
Juice of 2 limes
1 Tbsp. sugar
1 cup balsamic vinaigrette salad dressing (not balsamic vinegar)

In a food processor or blender, combine tomatillos, cilantro, garlic, jalapeno, lime juice, and sugar. After it is all blended up well combine with balsamic vinaigrette in an airtight container and refrigerate for at least 2 hours (overnight is best).


Honey-Lime Dressing (and salad recipe)
1/4 cup fresh lime juice
2 Tb. olive oil
2 Tb. honey
2 Tb. finely chopped cilantro
1 clove garlic, minced
1 tsp. chopped jalapeƱo pepper

Blend dressing ingredients and serve over:

2 1/2 cups chopped romaine lettuce
1 can (15.5 oz) black beans, rinsed and well drained
3/4 cup chopped seeded tomato
3/4 cup chopped peeled jicama
3/4 cup fresh corn kernels, uncooked (or frozen or canned)
3/4 cup thinly sliced radishes
Half a ripe avocado, diced
1 red bell pepper, chopped
1/4 cup crumbled reduced-fat feta cheese
Tomatillos before husks are removed

Chevy's Sweet Chipotle Dressing
1 tablespoon diced yellow onion
1 tablespoon chopped garlic
2 tablespoons Dijon mustard
1/4 teaspoon ground cumin
1/2 cup diced fresh tomatoes
2 tablespoons chopped cilantro
2/3 cup seasoned rice wine vinegar
1/4 teaspoon black pepper
1 teaspoon salt
2 tablespoons honey
2 tablespoons Chipotle Puree
1/2 cup olive oil

This sweet-hot vinaigrette is the star ingredient in our Smokin' Chipotle 'Slaw. For best flavor, make it a day ahead of time. Tossed with diced mango or pineapple and red onion, it makes a mean fresh salsa. Or use it as a dressing for hearty greens, like romaine or spinach. ~Chevy's Fresh Mex
