Greek Spinach and Rice

2 tsp. olive oil
1 cup chopped onions
3 cloves garlic, finely chopped
1 10-ounce package frozen chopped spinach, thawed and drained
2 Tb. Grated Parmesan cheese
2 cups cooked brown rice
Salt and pepper to taste

Heat oil in medium saucepan over medium heat. Add onions and garlic. Cook until onions are tender, about 5 minutes. Add small amounts of water, if necessary, to keep from sticking.

Add remaining ingredients and heat through, stirring. Serve hot.


Serves 4: 6 g protein; 4 g fat; 29 g carbohydrate; 105 mg sodium; 2 mg cholesterol
