CZ's Jelly Roll

3 eggs
1 cup sugar
1-1/2 tsp. vanilla
3/4 cup flour
1 tsp. baking powder
1/4 tsp. salt
1/3 cup water
Powdered sugar
2/3 cup jelly or jam

Heat oven to 375 degrees. Line 15"x10"x1" jelly roll pan with parchment paper. Grease generously.

Beat eggs until lemon colored, about five minutes. Add sugar gradually and beat in vanilla on low speed. Add flour, baking powder, and salt and beat just until smooth. Pour in pan and bake 12-15 minutes.

Immediately loosen from pan onto towel sprinkled with powdered sugar. Roll up from narrow end and let cool thirty minutes. Fill with lemon curd, whipped cream, pudding, jelly or ice cream.

Lemon Curd
3/4 cup sugar
3 Tb. Cornstarch
1/4 tsp. salt
3/4 cup water
1 tsp. grated lemon peel
1 Tb. Butter
1/3 cup lemon juice
4 drops yellow food coloring

Mix cornstarch, sugar and salt. Stir water in gradually and cook until mixture boils, stirring constantly. Boil and stir one minute. Remove from heat and add peel and butter. Stir in lemon juice and coloring.
