Apple Muffins

1 egg
1/2 cup sugar
4 Tb. oil
1 cup milk

Using an egg beater (or mixer), combine all ingredients in a small bowl.

2 cups flour
3 tsp. baking powder
1/2 tsp. salt

Sift together in a medium-sized bowl. Pour milk & egg mixture into the center of the flour. STIR SPARINGLY! If you stir too much, muffins have a volcano-top while baking.

Once just barely blended together, add 1 cup chopped, peeled apples and STIR LIGHTLY.

Pour batter into well-buttered muffin tins (about 2/3 full). Spoon a little heap of cinnamon and sugar over the top of each muffin. Using a fork, rake the sugar and cinnamon mix...just a little bit.

Bake 20 minutes at 400 degrees.

(You can pour this batter into an 8-inch square pan and cut in squares).
