Before mixing ingredients: Melt 2 Tablespoons of butter in a 9" x 13" pan at about 400 degrees.
1/2 tsp. salt
2 cups flour
2 cups milk
4 eggs
Blend ingredients in a blender, or with a mixer. If using a blender, be sure to add flour after adding milk and eggs. Pour batter on top of melted butter in hot pan. Bake for 25 minutes at 400 degrees.
Dad's family used to make this when he was young, a tradition he continued with his own family. The way we learned to eat Yorkshire pudding as kids was to put a chunk in a bowl. Cover it with oodles of sugar and pour cream on top. Or milk. Whatever we had in the fridge. I'll bet the only time Dad got Yorkshire Pudding was when there were extra 'cracked eggs' in the henhouse since his mother was soooooo frugal, she sold perfect eggs at the local market. If there weren't any cracked eggs, you didn't get eggs for breakfast.
