Roasted Broccoli, Cauliflower, and Carrots



2 medium stalks broccoli, cut into florets
1 small head cauliflower, cut into florets
4 large carrots, sliced into about 1-inch chunks
Cooking spray, preferably olive oil
Paprika
3 cloves garlic, thinly sliced

Preheat the oven to 425 degrees. Line a baking sheet with nonstick aluminum foil. In a single layer, place the broccoli, cauliflower, and carrots. Spray with the cooking spray, then sprinkle with the paprika and garlic slices. Bake 25-30 minutes. 

Makes 4-5 servings

*May use frozen mixed cauliflower, broccoli, and carrots
