Zucchini Lasagna

1 tablespoon olive oil
2 large zucchini, sliced about 1/4 inch thick
4 large tomatoes, sliced about 1/4 inch thick
2 medium onion, sliced thin
1 sprig fresh basil, chopped or finely sliced
Italian seasonings
Ground black pepper
8-ounces mozzarella cheese, shredded

Preheat oven to 400 degrees. In a 2-1/2 qt. oval baking dish, pour the olive oil or spray with olive oil cooking spray. Cover the bottom of the dish with sliced zucchini. Then spread a layer or tomatoes and a layer of onions. Top with half of the sliced basil, Italian seasonings and ground pepper. Add a layer of about half the shredded cheese. 

Repeat layers. 

Bake about 30 minutes and let cool for five minutes before serving. 

Makes 6 servings
