1 pound extra-lean ground sirloin
1 onion, diced
1 cup pepper strips
2 cloves of garlic
14.5-ounce can diced tomatoes
15-ounce can tomato sauce
15.5-ounce kidney beans
15.5-ounce black beans
2 tablespoons chili powder
2 tablespoons paprika
1 teaspoon ground black pepper
1/2 bag of frozen carrots, cauliflower, broccoli (Normandy Mix)
Heat a large nonstick skillet over medium-high heat. Add ground beef, onions and peppers and cook about three minutes. Turn down the heat to medium. Stir occasionally while continuing to cook. Turn down heat to medium-low and add garlic. Continue to cook about three more minutes or until the meat is thoroughly browned.
Add the tomatoes, beans and seasonsings. Mix well and allow to simmer for about five minutes. Then add frozen vegetables. Continue to simmer for 30-60 minutes. If the chili starts to get thick, add a little more tomato sauce.
Makes 10 1-cup servings
*Almost impossible to overeat since it's packed with vegetables!
