7-Up Salad

2 small packages Lemon Jell-O
2 cups of 7-Up (scant)

Dissolve Jell-O in 1-1/2 cups of boiling water. Add 7-Up. Place in refrigerator until partially set. Then add:

2 ounces crushed pineapple, drained
1 cup small marshmallows
2 sliced bananas

Chill Jell-O and fruit mixture until set. Once solid, frost Jell-O with cooled topping. 

Topping
1/2 cup sugar
2 Tb. flour
1 cup pineapple juice
1 beaten egg
2 cups of whipped cream, whipped

Cook ingredients (except for whipped cream) until thick. Add 2 Tb. butter. Allow to cool in refrigerator. 

When chilled, fold in 2 cups of whipped cream and spread over gelatin. Sprinkle with grated cheddar cheese and top with maraschino cherries.
