Shrimp Tacos


Favorite Family RecipesKristin's Shrimp Tacos 

Coleslaw:
4 cups shredded green cabbage (grated in the Cuisinart)
3 Tbsp Lime Juice (one fresh lime)
1 1/2 Tbsp dried oregano
One bunch of chopped green onions
Additional chopped cilantro

Toss fresh vegies with lime juice and season with salt.

Cilantro dressing:
1/2 cup mayo
1/2 avocado
1/2 cup cilantro
3 Tbsp lime juice (one fresh lime)
1/8 tsp cayenne pepper

Mix thoroughly in a blender adding a little water if needed.

Shrimp:
1 pound shrimp
1 Tbsp vegetable oil
Fresh sliced onions, peppers and chilies
1/2 package Fajita spices

Peel shrimp, pat it dry, season with salt, pepper, and fajita spices. Heat oil over high heat and saute onion, peppers and chilies. Add shrimp. Cook until shrimp are curled and pink.. 

Layer the sauce, shrimp, and cabbage in a warm corn tortilla. 


I made this recipe tonight and it is...well...FANTASTIC. I modified the recipe and noted my modifications above. Ya gotta try it. At least try the grated cabbage tossed with lime juice and salt!! It's terrific and low-calorie too 'cuz there's no fat. We didn't add any cheese to the tacos. The cilantro dressing is amazing. It would be good on a bed of lettuce or a taco salad. Kinda fattening---but avacadoes are healthy, right?
